The Challenge of Feeding Teenage Boys

During their school holidays I decided to start a meal routine which they enjoy but that stops me feeling as if I am spending all my time in the kitchen!
Breakfast is simple. We always have cereals and toast. To drink the boys have a choice of fruit smoothies, orange juice and, of course, coffee. Bacon and eggs are available if the boys are enthusiastic enough to cook them. So, of course, this does not happen very often!
For lunch as everyone's schedule is different I keep a selection of food in the fridge which can be used to make up sandwiches. This generally consists of cheese, cold meats, salamis, hummus and salad items. There is fresh bread and dry biscuits available and in addition I always keep a choice of soups.
The evening meal is when we all sit down together. The boys favourite meals are meat based. Roast beef, pork or lamb is always popular with potatoes either roasted or mashed and a selection of cooked vegetables. Pasta dishes such as lasagne or spaghetti Bolognese served with a fresh salad and French bread is both economical and nutritious. Spare ribs or chilli con carne with rice is easy to prepare as are Moroccan style chicken dishes served with couscous. In the summer a large salad with a mixture of ingredients such as goat cheese, smoked fish, boiled eggs, cold meats, nuts and baby new potatoes are always popular. Steaks with sauté potatoes and salad never fail to be a success.
