When you make them you will add some decorative scrapping along the sides of the cucumbers before slicing them into pieces to add to the fancy cut breads you use. Just make sure to choose the smaller loafs of fancy breads for making these delicate and charming sandwiches.
You can make the whipped cream cheese spread the night before if you like and then wait until you are nearly ready to serve to slice the cucumbers and then arrange the slices on the sandwiches. This way you do not have to worry that the bread is drying out or becoming stale and the cucumbers will not wilt before you can serve them to your guests.
Recipe for Fancy Cucumber Sandwiches
What You Need
- 2 medium cucumbers
- 1 container whipped cream cheese spread
- 2 packets of dry Italian dressing mix
- Dill weed
- 1 loaf fancy cut rye bread
Rinse the cucumbers well using cold water and then drain the vegetables. After drying use a fork to scrap down the sides of the cucumbers lengthwise to create stripes all the way around the cucumbers. Cut cucumbers into slices of about ¼ inch in thickness or even thinner. Set aside until needed.
Using a small bowl you will add the whipped cream cheese spread and the packets of dry Italian dressing mix. Blend well to combine.
Spread this mixture thinly yet evenly onto the individual slices of fancy cut rye bread or any other small fancy bread you might like to use instead. Concentrate on adding just enough onto the center of the bread to help hold the cucumber slices on the bread for serving.
Place one cucumber slice on top of the middle of the bread onto of the cream cheese spread. Sprinkle a very small amount of dill weed on top of the cucumber slice. Arrange on a decorative serving platter and then cover the platter tightly with clear plastic food wrap. Alternately you may have a serving tray with a lid. Cover the sandwiches to prevent the bread from drying out as well as reduce the odds of the cucumbers becoming soft rather than crisp and tasty. Serve as open face sandwich appetizers to family, friends, or party guests.
